Forget Mandazi, this is how to make Kaimati

Kaimati or Sweet Dumplings are one of the most famous delicacies in the Kenyan Coast. They make for a delightful snack that is enjoyable at any time.

Ingredients
125g plain white flour
5ml ( 1teaspoon) instant yeast
3-4 Cardamon Pod
3/4 kgs sugar
125 ml milk or water
Oil for frying

Method

Mix flour , yeast, and pounded cardamon seeds in a bowl, then add water or milk.

Mix in just a little water and go on beating well for about five minutes with your hand until you pick up a piece of mixture in your fingers.

Leave to rest.

Make a syrup with sugar , flavor with cardamon and let it cool thoroughly.

Put enough oil in a Fryer or big Karai for the deep frying.

Shape the mixture into tiny balls and put into boiling oil, then reduce heat. Turn and stir until they are all golden brown.

Remove  with a slotted spoon, shaking off excess oil , then drop into the syrup.

Serve on plate and serve with black coffee  ( kahawa chungu)
