Want edible crickets for lunch? ICIPE reveals new delicacy

Would you mind having some crickets for dinner?

That is highly possible if a discovery by International Centre of Insect Physiology and Ecology (ICIPE) is anything to go by.

According to the researchers, the new edible cricket has great potential for mass production in Kenya for human consumption.

The cricket species has been named Scapsipedus icipe.

Researchers add that the edible cricket can also be used in the manufacture of animal feeds as it contains an alternative protein ingredient.

The edible cricket is commonly found around buildings and fields, and is characterised by a distinctive yellow band between the eyes.

The discovery is just one among many initiatives by ICIPE aimed at promoting alternative foods in the country.
