RECIPE: How to spice up your Matoke

East Africans have for a long time made this staple food; Matoke. Use this recipe for spicy Matoke made in a different way. Your family and guests will enjoy this.

Ingredients:

3 pieces Peeled Plantains (green bananas)

3 teaspoons Chopped Red Onion

2 teaspoons Chopped Bell Peppers

3 pieces Firm Ripe Tomatoes

2 teaspoons Corriander Chopped (Dhania)

2 teaspoons Cooking Oil

Salt-half tea spoon.

1 teaspoon Curry Powder

Tumeric Powder-Half tea spoon.

Cumin Seed or Powder-Half tea spoon.

Method

Add cooking oil and chopped onions to sauce pan (sufuria) and cook till tender.

Add the chopped bell pepper and garlic and cook for further three minutes.

Add plantains and cook for five minutes.

Add tomatoes and coriander, stirring to prevent the plantains from sticking to the pot.

Add ground a mixture of ground turmeric, coriander and cumin seeds. Amount to add depends on how spicy you want the dish to be.

Add 1.5cups of water .

Add seasoning(salt) and curry powder.

Continue to boil then reduce heat and simmer for 20-25mins,after that your plantains are to serve and eat.
