RECIPE: Pumpkin Soup

Many people wonder what light meal to eat before having a heavy meal.

The pumpkin soup is a healthy option and is mainly used as a starter. It is also very easy to make.

INGREDIENTS

800 GMS Pumpkin Purre

100 GMS Chopped Onion

1 Garlic clove

10 GMS Salt

3 GMS Chopped Parsley

4 GMS Fresh Thyme

250 LT Whipped Cream

4GMS Black Pepper

80 GMS Celery

METHOD                    

Mix all the stock together; pumpkin, onion, thyme and garlic.

Season them and bring to boil

Reduce the heat and simmer for 30mins uncovered

Pour the soup in small batches using food processor or blender

Return to boil and bring it to boil for 5mins and then reduced heat.

Add whipped cream and serve it hot
